Wild Boar
Broadleaf's Wild Boar are humanely captured from the hilly ranch country outside of San Antonio, Texas. Being wild they are entirely free-range, with no added hormones, steroids, or antibiotics. Their eclectic diet includes wild nuts, fruits, roots, and tubers. This leads to a product that is lean and exceptionally flavorful, and gives it a completely different taste than commercially raised pork.
Best when middle meat (racks, loins, and tenders) are quickly sautéed or grilled over high heat. Legs or shoulders may be braised or slow roasted.
