Wild Boar Medallions with Crushed Peppercorn and Tequila Salsa
Ingredients
2 packages Broadleaf Wild Boar Medallions
1/2 C. Tequila
1/2 C. red wine
1/4 C. water (chicken stock)
1 t. sugar
2 T. shallots
1 mango
1/2 pt. strawberries
1 papaya
1 banana
chopped mint to taste
fresh black peppercorn, crushed
salt to taste
Methods/steps
Heat pan on high, coat with vegetable oil.
Cook medallions for 1 minute on each side, set aside.
Add shallots and sugar to pan and saute until translucent.
Add tequila and red wine, deglaze, add water and salt to taste, reduce.
Remove and strain sauce, chill immediately.
Dice fruit, mix in mint and chilled sauce.
On high saute medallions for one minute on each side to reheat.
Serve immediately with Tequila salsa on the side.
