Roasted Guinea Hen
Ingredients
1 Broadleaf Guinea Hen
2 T. olive oil
salt and pepper, to taste
1 each: carrot, celery, onion, coarsely chopped
2 C. chicken stock
1/2 C. white wine
Methods/steps
Preheat oven to 450 degrees F.
Rub the bird with olive oil then season with salt and pepper, to taste.
Place vegetables, chicken stock and wine in a shallow baking dish, then place the bird on top.
Place in oven and roast at 450 degrees F for 20 minutes, basting often.
Reduce heat and cook for 40 minutes, or until done, basting occasionally.
Remove from oven and allow to stand approximately 5 minutes before carving.
