Kangaroo Medallions with Quick Mustard Sauce
Ingredients

1lb. Broadleaf's Kangaroo Medallions.
1 tbls. light or regular olive oil.
Sauce:
3/4 cup cream.
2 tbls. chopped green shallots.
2 tbls. whole grain mustard.
salt to taste
Methods/steps
Prepare the sauce first. Place cream, shallots and mustard in a pan, bring to a boil and simmer 1 minute. Season with salt to taste. Heat oil in a fry pan and cook medallions over high heat for about 2 minutes, turning once during cooking. Transfer to a warm plate allow to stand for another 2 minutes. Slice medallions and serve with hot sauce, baby potatoes and snow peas or beans.
