Rabbit
The rabbits we bring you are farm raised by the highest quality producers in the United States. They are bred from a cross of California's white and the New Zealand white and are the most tender of all rabbit breeds. They are raised naturally without hormones or antibiotics and fed a diet of corn, soy, and wheat, supplemented with alfalfa.
Rabbits are sold as fryers and roasters. Fryers harvested at 9-12 weeks, weigh 2-3 1/2 lb. and are more tender than roasters which are harvested at 5 lb. or over.
Broadleaf Rabbit is:
- Farm raised and has a greater ratio of meat to bone than wild rabbits. Of all the farm game being raised today, rabbits are perhaps the best buy and the most under-utilized.
- High in protein and vitamin B, and low in cholesterol.
- An extremely versatile and tasty meat, whether cooked slowly in a casserole or simply grilled. Every ethnic cuisine has its classic rabbit dish and the popularity of rabbit has risen dramatically in the last few years.
- A delicately textured white meat, slightly sweet and similar to chicken in taste and versatility. Saddles and loins are perfect for grilling or sautéing. The hind legs and forequarters are ideal for braising or roasting slowly at low temperatures.
- Since these animals are especially susceptible to extreme weather, availability and price may fluctuate.
