Foie gras farming is a five thousand year old tradition. Livers are meticulously separated into grades of A, B and C, depending on size, texture and color. Moulard foie gras provides a significantly better yield than differently bred foie gras and works well for both sautéing and pate production. The foie gras we offer is produced in America by artisanal farmers using humane and sustainable farming methods. The product is raised cage free and 100% natural.
